    About this coffee

    Only the strongest, fittest flowers can bloom in the desert. Our Flor del Desierto, or flower of the desert, is sourced through Cuatro Vientos' network of selected farms in Acevedo, Huila. The Siete Soles Drying Complex and innovation center has 6,000 sq m (64.500 sq ft) dedicated to specialty coffee drying processes focusing on innovative practices and sustainability efforts.

    Coffee is selectively handpicked by smallholder producers and their families. Once picked, ripe, red cherry is brought to a newly constructed drying facility in Acevedo, Huila called Siete Soles Drying Complex. At Siete Soles, cherry is floated to remove floaters and then lightly fermented for 48 hours. Then, cherry is laid on patios to sun dry. Cherry is raked frequently to ensure even drying.

    Cuatro Vientos is a family-owned exporter based in Colombia. Founded in 2018 by Julian & Yonatan Gonzalez and based in Huila, the company is named after the Gonzalez’s first farmnwhere the brothers spent much of their childhood. Yonatan and Julian learned much of what they know from their father, Armando Gonzalez who was a “pergaminero,” someone who bought and sold parchment coffee. Sucafina has worked with Cuatro Vientos since 2021.
