    The process named on the bag matters more for decaf than almost anything else. Swiss Water removes caffeine with nothing but water and carbon filtering; sugarcane (EA) decaffeination uses ethyl acetate derived from fermented sugarcane molasses — usually done in Colombia at origin — and tends to leave a gently sweet, rounded character. Those two account for most UK specialty decaf, and both keep flavour in a way older solvent methods didn’t. Beyond the process, buy decaf like any other coffee: check the roast date, take whole bean if you own a grinder, and match the roast level to your brewer.
