Union Cantinil is situated in the Huehuetenango Provence The area in which it is grown has deep well drained soils and large rocky out crops which creates perfect growing conditions for the coffee trees. A stable microclimate, protecting the farms from extreme weather conditions. This, along with the soils conditions contributes to the dense, syrupy body, and pronounced acidity in the cup, giving the cup a very refined balanced acidity and floral characteristics.
Large parts of the farms are protected areas of wild forest, much of which is used to prevent soil erosion and reduce the plants exposure to winds. This is based on a permaculture model, with the intention of sustainability and respect for the environment, to try and recreate coffee’s natural habitat in high altitude forests.
