About this coffee
Ensambles started off in 2013 with a biodynamic coffee farm in the state of Veracruz called El Equimite. Gibrán Cervantes , the owner, has the vision to produce nutritious food in healthy ecosystems, using regenerative agriculture.
There are only two certified biodynamic coffee farms in Mexico and this is one of them. The farm has 32 hectares of which 12 are cultivated with different crops: coffee, medicinal plants, curcuma, fruits and greens. It looks like a forest, with many layers of shade and rich smooth soils. All intrants are produced at the farm following the biodynamic guidelines.
There have 14 varieties of coffees: gesha, pink bourbon, SL28, caturra, typica, Ana cafe 14, yellow bourbon, Obata, etc.
