    This is a luxury expression of Geisha from Sebastián Ramírez, produced at Finca El Placer in Quindío, Colombia. Sebastián has spent years refining his approach to fermentation, varietal selection, and drying — and it shows in every part of this coffee. The cherries undergo a 48-hour anaerobic fermentation before being pulped and dried slowly under shade with a thin layer of mucilage left intact, a process known as white honey. It’s an extremely precise, high-maintenance approach, designed to preserve florality and structure without sacrificing complexity. The result is everything you hope for in a Geisha: jasmine and lavender on the nose, crisp white grape and citrus on the palate, with a honeyed mouthfeel and soft herbal finish. Sweet, vivid, and astonishingly clean.
