After careful cherry selection, the coffee undergoes a 48-hour anaerobic fermentation before drying, a process that deepens sweetness while preserving the lively structure Kenyan coffees are known for. The result is vibrant and expressive, balancing ripe fruit with layered acidity and a rounded sweetness that carries through to a clean, juicy finish.
