India offers two very different things. Washed Arabicas from the Western Ghats (Chikmagalur, Baba Budangiri, the Shevaroys) are clean, spicy and chocolatey. Monsooned Malabar is the oddity: green beans are exposed to monsoon-season winds for months until they swell and mellow into a heavy, low-acid, almost savoury cup. Indian Robusta is also prized for espresso crema. Choose Malabar for dark, milky drinks; washed Arabica for a cleaner cup.
